Late summer is here and there is just something special about this time of the year. It arrives quietly and softly – like a dear friend who isn’t busy and who just sits down next to us and reminds us to enjoy whatever is left of the wonderful summer. The light is soft as a lower angle, the colors are deeper and the garden is now full of all the things we’ve been waiting for: sun ripened fruit, lots of flowers, and vegetables that taste of sun and summer. In August and September, we enjoy the last summer warmth and we try to make the summer last just a little bit longer. Perhaps by sitting in an orangerie, lighting a candle and filling the room with aromas of ripe apples and freshly baked cake. Or by having a nice dinner with people we love – prepared with finest seasonal ingredients. In this edition of magazine, Mathilde, Tine Vibeke have shared some recipes that seem to express this atmosphere – simple tasty dishes with fruits vegetables from late-summer pantry.
Basically it’s all about being present. Finding joy in our surroundings in nature in life that we create. We hope you’ll find plenty inspiration to look for such small moments really cherish them. But also take deeper breaths let your shoulders drop perhaps even extend summer make concept time feel bit slower richer.
